"The cabbage takes on a nice buttery taste," says Kathleen.
2 14 oz. cans white beans
1 lb sweet potatoes, pared, chopped
½ head small cabbage, chopped
1 large onion, chopped
2 cloves garlic, chopped
1 T. olive oil
8 c. chicken or veg stock
1 t. thyme
Salt, pepper
Sauté onion and garlic about 5 min; add veg and stock, bring to boil. Simmer about I hour. Add seasonings. Freezes well.
