Jambalaya

2 TB oil

1 large onion, chopped

1 cup green pepper, chopped

2 cloves garlic, minced

1 cup cooked chicken, diced

1 cup sliced smoked sausage

1 cup ham, diced

2 ½ cups tomatoes, chopped

2 ½ cups chicken broth

1 cup rice

1 TB parsley, chopped

½  tsp dried thyme

1 ½  tsp salt

½  tsp Tabasco

Heat oil in a large saucepan. Saute onions, green pepper and garlic until tender. Add meats and cook 5 minutes. Add remaining ingredients, bring to a boil, cover and simmer approximately 20-25 minutes, or until rice is done and liquid is absorbed.
