This simple combination is extremely delicious.
1 lb. dried white beans, cooked (or 2 cans)
½ cup reserved bean cooking liquid (or liquid from canned beans)
5 TB olive oil
8 mild Italian sausages
4 cloves garlic, crushed and peeled
3–4 canned plum tomatoes, chopped
pinch dried red pepper flakes
1 cup tomato purée
salt and pepper
Heat 1 TB olive oil in a large skillet over medium heat, and fry sausages until lightly browned, 3–4 minutes per side. Add reserved cooking liquid, remaining 4 TB olive oil, garlic, chopped tomatoes, and red pepper flakes. Simmer, stirring occasionally, until slightly thickened, about 5 minutes. Add beans and tomato purée and season to taste with salt and pepper. Continue to simmer until sauce has thickened and sausages are cooked, about 15 minutes.
