Grandma Kelly's Beef Stew

2 lbs. boneless beef chuck, cut in 1" cubes

2 cups hot water

1 tsp lemon juice

1 tsp worcestershire sauce

1 medium onion, chopped

2 small bay leaves

2 tsp salt

1/2 tsp pepper

pinch of allspice

6 carrots, halved

8 small onions (less if you prefer), quartered

3 potatoes, quartered

Brown meat on all sides in dutch oven. Add water, lemon juice, worcestershire, chopped onion, bay leaves and spice. Cook covered for 1/2 hour at gentle simmer - do not gallop! Add vegetables and continue cooking for 30 minutes, or until meat is very tender and vegetables are done. At the last moment, thicken gravy to your own taste.
