Ingredients:
2/3 c red lentils
1 c hazelnuts
1 c walnuts
1 large carrot
2 celery stalks
1 large onion
4 oz mushrooms
1/4 c butter
2 t mild curry powder
2 T ketchup
2 T soy sauce
1 egg
2 t salt
4 T chopped fresh parsley
2/3 c water
Instructions
soak lentils for 1 hr in cold water then drain well. grind the nuts in a food processort until very fine but not too smooth, set aside.
chop carrot celery onion and mushroom into small chunks then process in food processor until they are finely chopped
fry veg gently in the butter for 5 min then stir in the curry powder and cook for a minute, cool
mix the lentils with the nuts, veg and remaining ingredients
grease and line the bottom and side of a long 2 lb loaf pan with waxed paper or a sheet of foil, press the mixture into the pan
bake in preheated 375 oven for 1-1 1/4 hours until just firm (covering if it starts to burn) let stand for about 15 min before you turn it out and peel off the paper. It will be fairly soft when cut, as it is a moist loaf.
