Mary's Chocolate Eclair Ring

Ring:

1 cup water

1 cup flour

½ cup margarine

4 eggs

Boil water and margarine. Stir in flour over heat until it forms a ball. Remove from heat and beat in the eggs, one at a time. On a greased cookie sheet, spread the dough in a ring and bake at 450˚ for 40–50 minutes. When cool, cut off the top of the ring, add filling, then replace the top.

Filling:

3 small packages vanilla pudding

2 ¼ cups milk

(or 2 large packages of pudding and 2 ½ cups milk)

12 ounce cool whip

Mix pudding and milk according to package directions. Fold in cool whip.

Icing:

2 ounces unsweetened chocolate

2 TB milk

2 TB margarine

1 cup powdered sugar

1 tsp vanilla extract

Melt the chocolate with milk and margarine, beat in the powdered sugar and vanilla, then pour over the filled ring.
