Beet Cake

Ellen made this delicious chocolate-y moist cake at the 2012 reunion. Oh, and it is vegan too!

1/2 cup canola oil

1 1/2 cup dark brown sugar

2 cup pureed cooked red beets

1/2 cup chocolate chips, melted

1 tsp vanilla

2 cup all purpose flour

2 tsp baking powder

1/4 tsp salt

 

Preheat oven to 375, lightly oil bundt pan.

Cream together oil and brown sugar. Add beets, melted chocolate chips and vanilla, mix well.

In a separate bowl combine flour, baking powder and salt, add to wet beet mixture and stir until just combined.

Pour mix into bundt pan and cook 45 min.

 

Frosting

Beat together 1/4 cup each: pureed beets, confectioner sugar and nondairy butter.
