Apple Cake

Butter bundt or tube pan and coat with bread crumbs. Preheat oven to 350 and place rack in position  1/3 from the oven bottom.

Sift together:  

3 cups flour 

3 tsp baking powder 

1 tsp salt

Mix: 

1/3 cup sugar 

2 tsp ground cinnamon 

1/2 tsp ground nutmeg 

1/2 tsp ground ginger

Peel and cut in 1/3" dice: 

1 3/4 lbs. tart apples (5-6 med. apples, preferably Granny Smith)

Chop: 

1/2 cup walnuts and mix with 

1/2 cup raisins Beat together: 

4 eggs

Beat in: 

1 cup oil 

2 tsp vanilla 

1/3 cup Calvados, applejack, brandy, or apple juice 

2 cups sugar

Mix in dry ingredients at low speed, just until smooth. Pour 1/2 of batter into prepared pan.

Top with half of the raisin walnut mixture, half of the apples, then half of the cinnamon sugar mixture. Top with remaining batter, then repeat layering. Cover tightly with foil and bake 25 minutes. Continue baking 1 hour and 15 minutes, covering again with foil for the last half-hour. Cool in pan for 20 minutes then invert onto cake plate.
