Kathy's Yeast-Raised Waffles

Scrumptious, and so nice to wake up to batter ready to go!

½ cup warm water

2 tsp yeast

2 cups milk

½ cup butter

2 cups flour

1 tsp salt

1 tsp sugar

2 eggs

¼ tsp baking powder

Combine warm water and yeast in a 2 quart bowl. Let stand 5 minutes while you heat the milk and butter to body heat temperature. Whisk together milk, butter, and yeast mixture, then whisk in flour, sugar and salt. Cover with plastic wrap and let sit at room temperature 8 hours, or overnight.

When ready to cook, heat waffle iron and whisk the eggs and baking powder into the batter. Cook on hot waffle iron until golden, or cover and refrigerate until the cook is ready, up to two days.
