Cornmeal Mush

1 cup cornmeal

1 tsp salt

Mix the cornmeal with 1 cup water. In a large saucepan, bring 3 cups water to a boil and stir in the cornmeal and salt. Cook, stirring constantly for about 7 minutes, or until very thick. Pour into loaf pan and refrigerate overnight.

Cut cold mush into thin slices and fry in hot bacon fat or butter until golden brown on both sides. Serve with maple syrup or butter, salt and pepper.
