Nancy's Salmon Tartare

Nancy wasn’t able to give me quantities, but you can adjust them to your taste. It will be delicious no matter what! 

impeccably fresh salmon

capers, chopped

dijon mustard

fresh parsley, chopped

cornichons, chopped

olive oil

onion, minced

salt & pepper

rice crackers, wonton shells, phyllo shells, or whatever

Cut the salmon into tiny ¼-inch dice and mix with remaining ingredients to taste. Should be highly seasoned. Keep ice cold and serve immediately.
