I have copied this recipe for more friends than any other. Always a hit at parties.
16 ounce cherry tomatoes, quartered
3 TB minced fresh basil
5 ounces Boursin cheese with pepper
5 ounces Boursin cheese with herbs
6-8 TB milk
Spread tomatoes in a single layer over bottom of a shallow 2 or 2 ½ qt. baking dish. Sprinkle with half of the basil. In a small bowl combine the cheeses. Add enough milk to form a thick, lumpy sauce. Pour over the tomatoes, covering completely. Sprinkle with remaining basil and bake in 350˚ oven for 15–18 minutes. Serve hot with crackers. May be assembled 1 day ahead, refrigerated and brought to room temperature before baking.
