Carrot and Lentil Spread

2 carrots, chopped fine
1 onion, chopped
1 clove garlic, chopped
1 tsp cumin
1/2 tsp coriander
1/2 tsp salt
3 TB olive oil, or more as needed
1/2 cup lentils
handful of cilantro
lemon juice to taste

Toss carrots, onions, garlic and spices in a bowl with 2 TB olive oil. Roast in the oven or saute until veggie are tender and beginning to brown. Meanwhile, simmer lentils in water for about 10-15 minutes, until tender. Drain lentils and combine with veggies in food processor. Add cilantro and remaining olive oil. Process until well combined. Season to taste with salt, pepper and lemon juice. Add more olive oil if needed.
